I think this is the fourth year of this calendar, based on biodynamics and which traces out the best days - fruit and flower, rather than leaf and root - on which to drink wine. The wine merchant David Motion is quoted as saying that the same wines tasted on Tuesday and Thursday were much more expressive on the latter day. I must admit to not yet having tried this out myself, but will do so before the next edition comes out. At the back of the book, there is a brief description of the background of organic and biodynamic, which is becoming increasingly popular in France. One of the great Bordeaux châteaux, Pontet-Canet, has been biodynamic for some years, and vignerons are beginning to pay more attention to the quality of the soils and the fact that using horses results in less compaction.
